Chablis is one of the most famous name of wine region all over the world. Commercially Chablis made a big success in the international market. But how long have we waited for the arrival of new name on the scene of Quality Chablis since Dauvissat and Raveneau? In fact those two domaines had been only choice for quality oriented wine connoisseurs like us for many decades.

Actually a few producer began challenging in early 90’s. Some of them are new comers, some of them got vineyards through the alternation of generation. And they have improved quality of wine consistently on the underground. Not long after, those new Chablis attracted trendsetters in gastronomy and wine shops in Paris, but it took a long time to be discovered by critics and international market. Today we are able to find several new rising star in this area.

ALICE ET OLIVIER DE MOOR

Alice was born in Jura and Oliver was born in Chablis. They began to produce wine in Courgis/Chablis in mid 90's. They focus on quality of organic grapes and cellar work is totally natural. This style is rare in Chablis. Chablis is still being occupied factory-like commercial wineries. The wine has rich mineral(signature if Chablis), and fine acidity. Delicate, pure fruits and everything is wrapped by gentle touch.
