Made from highly concentrated 100% Sangiovese. It was like "juice" before, but now it's a serious wine. This Rosé wine could age well.


Our Rosato is made from Sangiovese grapes. The juice is drained from the concrete tanks and put directly in used barrels of multiple passages. The must is not clarified and nothing is added (no selected yeast nor sulfites).

The spontaneous fermentation is long and slow. After a couple of months the wine is moved from the barriques and the alcoholic fermentation is completed in a concrete tank. The wine is not racked off and it remains in contact with its fine lees and yeast until we bottle. The advantage of leaving everything together is that the lees give more substance to the wine and they consume oxygen which naturally protects against oxidation. When we bottle we prefer to add a low dose of sulfites and do a sterile filtration instead of covering the wine with a high dosage of sulfites and a heavy filtration.
