A special feature of Le Clos du Tue-Bœuf is its location on a clay soil composed of flint Blois chalk on south and southeast hillsides overlooking the Beuvron. Secluded from other agricultural areas, the vines at Le Tue-Bœuf are inserted in a patchwork of wild lands and woods that maintains a balanced ecosystem.

Being a farmer implies bearing ecological responsibility; this is why Jean-Marie and Thierry Puzelat converted the estate to organic vine-growing as soon as 1996. And since being a winemaker implies offering singular, digestible wines, the vinifications are performed without oenological additives since 1994.

Grape harvest is performed by hand, in order to sort grapes and keep only healthy and ripe ones. The vinification process involves no input. Only very low doses of sulfites may be added upon bottling.

The vinifications, performed without any provision of yeasts, are quite long. Barrel ageing allows natural maturation and settling of the wine. Only the wines aged in steel vats may be slightly filtered. Wines aged in tronconical tanks and barrels are bottled without any filtration.

For the Puzelats, making wine entails positioning as an intermediary between the soil and the glass of wine. Making the best of the parcels’ diversity. Imprinting the terroir’s and the vintage’s character. Offering vintages that express the place where they come from and the climate that witnessed their birth.

Today, Le Clos du Tue-Bœuf grows 10 hectares intended for the Cheverny AOC label in Les Montils and 4 hectares intended for the Touraine AOC label in Monthou-sur-Bièvre.

Menu Pineau from 1.4 ha parcel on mix of clay, flint, sand and gravel soil. Vines are 65 -80 years old in 2016 + 30% young vines. Yield : 40 hl/ha.  Aged for 12 months in 600-liter oak barrels and then 225-liter barrels. Blend of Chardonnay, Sauvignon, Menu-Pineau, Fié-Gris, Romorantin and Pineau de Loire. In 2017, Puzelat terribly suffered by frost and lost majority of crop. Then they scraped up tiny crops from all the vineyards to make one cuvee of VdF. Yield : 5hl/ha. Blend of 2/3 Côt(Malbec) and 1/3 Gamay from tiny 0.75ha parcel on clay and flint soil. Age of vines are average 35 years old. Yield : 40 hl/ha, aged for 10 to 12 months in 600-liter oak barrels and 225-liter oak barrels.

Pinot-Noir and Gamay. Due to small crop in 2017, Puzelat merged Caillère(Pinot)  and Rouillon(Pinot + Gamay) to make one cuvée, it's Couillon.
