In 2013, the city of Dijon purchased 160ha of land with winery facility called Domaine de la Cras, including vineyards of 5ha of Pinot Noir and 3ha of Chardonnay which are classified as Bourgogne AOC. Vineyards are expanding little by little and it is 11ha in total in 2018.

Domaine de la Cras appointed a young talented wine-maker Marc Soyard as a chief wine-maker/estate manager since 2014 vintage. Marc had experience in Domaine Bizot(Vosne-Romanée) as a vineyard manager and had worked with Jean-Yves Bizot closely for 6 years. He has brought Bizot's simple and natural manner to Domaine de la Cras. He farms vineyard organically(biodynamie) and vinification is executed by indigenous yeasts and without SO2.

Made from Pinot Noir no.113. (Dijon clone 113 is the most elegant and aromatic Pinot Noir).

The word L’Equilibriste can be translated into English as “Equilibrant” or “Tightrope walker,” and indeed, the label depicts someone balancing while dancing on the edge of a razor blade. The label also states sans sulfites ajoutés (no sulfur added). Marc Soyard is a natural wine producer who generally uses zero or very minimal amounts of sulfur, but this L’Equilibriste is said to be a more daring cuvée with no SO2 in his lineup.
Made from Chardonnay planted by Marc Soyard in 2018.

2023 Vintage : Well-ripened black fruit, significant grenadine, quite rich yet fresh and smooth. The liquid has a higher density. Like the Chardonnay cuvée, the dynamic changes after opening are exciting.

2023 Vintage : The wax cap is still soft and elastic. Right after uncorking, it is fresh with fine, gentle acidity, like a wonderfully pleasant fruit juice that makes us want to drink it all at once. But by the second glass (about 12 to 13 minutes after opening), a pleasant bitterness and saltiness emerge, adding depth and complexity to the wine. By the third glass, a different, richer fruit sweetness appears, creating a well-balanced stability. The wine is still very new, even slightly cloudy, but our customers should have no resistance to this kind of wine. Like freshly brewed new sake, it might be a delicious experience you can only enjoy now. We like it very much.

100% Chardonnay Bourgogne Blanc from 30 years old vines. Dijon is considered as "Pinot-Noir" area, but Marc Soyard is producing brilliant Chardonnay with purely Bourgogne profile. Fermented in oak barrels and aged in the barrel for 12 months. No new oak used. High quality standard of Domaine de la Cras.
In 2015, Marc Soyard acquired this small 0.33-hectare vineyard, located in Chenôve next to Bizot's Le Chapître. The vineyard was planted in 1983 and 2001 on clay-limestone soil and is farmed biodynamically.

The winemaking process uses whole bunches with semi-carbonic maceration for two weeks in open wooden vats before fermentation. The wine is fermented by natural yeast with no added SO2, and undergoes no racking, fining, or filtering. It is aged for 15 months in used oak barrels. Only 1,761 bottles were produced.
100% Chardonnay from over 35 years V.V. by Selection Massale on clay-limestone with marl soil, selected parcel which is located on the top of hill. The Cras vineyards are totally isolated, so he is never affected by pesticide spraying by neighbours.

Fermented in wooden barrel with no SO2 added, no culture yeast added. Aged in barrel for 18 months. No new oak. No fining no filtering before bottling. The Monopole "Cras Blanc" was made 6,471 bottles in 2022.
