In 2013, the city of Dijon purchased 160ha of land with winery facility called Domaine de la Cras, including vineyards of 5ha of Pinot Noir and 3ha of Chardonnay which are classified as Bourgogne AOC. Vineyards are expanding little by little and it is 11ha in total in 2018.

Domaine de la Cras appointed a young talented wine-maker Marc Soyard as a chief wine-maker/estate manager since 2014 vintage. Marc had experience in Domaine Bizot(Vosne-Romanée) as a vineyard manager and had worked with Jean-Yves Bizot closely for 6 years. He has brought Bizot's simple and natural manner to Domaine de la Cras. He farms vineyard organically(biodynamie) and vinification is executed by indigenous yeasts and without SO2.

65 years old vines from the vineyard in Ladoix. This vineyards are owned by Marc Soyard himself. Whole cluster, no SO2 added, no racking, fining, or filtering. Very small amount of SO2 added at bottling. Made only 1,643 bottles in 2019. Planted in 1983 and 2001, on clay-limestone soil. Vineyards are farmed biodynamically. 70% whole cluster by carbonic maceration and 30% whole cluster pressed. Fermented by natural yeast, minimal SO2 added, no racking, finining, or filtering. Aged for 15 months in used oak barrels. Made only 900 bottles. Made from Pinot Noir no.113. (Dijon clone 113 is the most elegant and aromatic Pinot Noir). This is a totally Non-SO2 cuvee. Zero sulfur during vinification and bottling.

Perfumy, pure, and delicate Bourgogne Rouge. Pinot-Noir from over 30 years old vines(biologic). Partially whole bunch, semi-carbonic fermentation. Fermented by indigenous yeasts, minimal SO2 added. Unfiltered, unfined. Authentic style Bourgogne Blanc with clean verticality in gentle touch. Lemony, fine mineral, and hint of honey in the finish.
Chardonnay from over 35 years old vines(biologic). Fermented by indigenous yeasts in 600 litre wood barrel, free from SO2 during vinification, and minimal added at the bottling. Unfiltered, unfined.
