[Lot 2023]
The popular Pet-Nat La Chassornade 2023 has arrived. The crown cap is back. Made from Burgundy Aligoté with primary fermentation in stainless steel tanks, followed by secondary fermentation in the bottle on the lees. No cultured yeast added, zero SO2, and unfiltered. Fine, smooth bubbles at 4+ atmospheres blend with rich fruit notes—lemon, grapefruit, white peach, a hint of herbs, and minerality—creating a beautiful cloudiness and a truly distinctive flavor.
By the way, "Chassornade" is a word coined by Frédéric Cossard, combining "Chassorney" and "Lemonade". Yes, he wanted to make a Pet-Nat that tastes like lemonade! It's cloudy because it was released without disgorgement.

[Lot 2020]
Like other wines, it is produced every year, and the taste varies each time; however, there is no vintage labeling, and the same design label is used each year, making it hard to distinguish between them. There seems to be an issue with inventory data management or possibly a mistake in the warehouse, as two lots from the 2020 and 2021 vintages exist. This wine was not particularly intended for aging, so the practice was to sell out one lot before moving on to the next. However, tasting both wines side by side was quite interesting. The Aligoté from Puligny-Montrachet shows a stark difference between the 2020 and 2021 vintages. Indeed, this is a reasonable observation given the vintage differences between 2020 and 2021 in Burgundy.

Roc Solare is the successor cuvée to Dans un Premier Temps. It is made from 90% Chardonnay and 10% Pinot Noir, sourced from vines averaging 45 years old, planted on Galets de Silex soil in the Coteaux du Sézannais. The blend consists of 70% 2021 harvest and 30% Perpetual Reserve wine dating back to 1986. Extra Brut : dosage 3g/l. Dégorgement : February 2024.

This pétillant naturel is made from a blend of Gamay, Aligoté, and Pinot Noir. Whole clusters of Gamay are fermented with maceration in the pressed Aligoté juice for one week, after which the Gamay is pressed. This method, called “Flottaison,” was pioneered by Daniel Sage in Ardèche. The Aligoté comes from all the Hautes Côtes Aligoté parcels of Domaine Chanterêves, harvested during the first picking (the second picking grapes are used for the respective Aligotés), and the Gamay comes from a 15-are parcel located in the village of Fussey.
The lovely label was drawn by Tomoko's cousin, and Matsuri means 'festival' in English.
(Please keep the bottle upright and chill it well before serving to avoid gushing. Handle the bottle gently and uncap it slowly.)

Ze Bulle is made by a unique and original method which was invented by Philippe Gourdon of Château La Tour Grise . All the carbon gas and aromas generated during the fermentation process are recharged into the wines before bottling.
The new lot Ze Bulle 2021 has pale pink colour, softly bubbled, a blend of 85% Cabernet Franc and 15% Cabernet-Sauvignon from biodynamically farmed vineyards. Grolleau Noir and Gamay were not blended in this year.
Françoise and Phillipe Gourdon retired in 2015 and then Bruno Ciofi's “Béret & Compagnie” had taken over the production of Ze Bulle in 2018. This lot has freshness and bright details. Alc 9.0%
