Sassaia is produced with Garganega (85-95%) and Trebbiano (5-15%) cultivated in the vineyards close to the winery, on Sorio hills, which soil is rich in minerals. The fermentation is spontaneous and it takes place in 30hl oak barrels, without temperature control. It is bottled in April or May of the following year, without clarification and filtration. Part of the bottling process occurs without adding sulphur dioxide. So San is produced with Tocai Rosso grapes (Grenache) in purity, cultivated in the Colli Berici area, where the soil is very different from the others Biancara’s land; in this area there is an argilo-calcareous soil with white and marine origin rocks. After the grape harvest, in mid-September, the grape is pressed and fermented with the skins for about 15 days, then is racked and aged in 15hl barrels for 18 months. Pico is produced with Garganega grape only, carefully selected in the highest hills of Gambellara, its fermentation starts spontaneously. The aging takes place for 12 months in big barrels (15 hectolitres). It is bottled without filtration and sulphites.

Pico is produced with Garganega grape from three parcels - Taibane, Faldeo and Monte di Mezzo, carefully selected in the highest hills of Gambellara. Angiolino Maule produced four PICO separately in 2013 - three PICO crus and PICO blended. Faldeo is located 250m above sea level and size is 1.5ha only. Fermentation starts spontaneously with macerations. The aging takes place for 12 months in big barrels (15 hectolitres). It is bottled without filtration and sulphites. SP68 Rosso, is a blend of two varieties Moscato di Alessandria 60% and Albanello 40%. Fermented by indigenous yeast only, 15 days skin-contact. Elevage for 6 months in concrete vats and bottled without filtration. The title "SP68" refers to the Strada Provinciale 68, a state route that passes by Arianna’s rural property. Grecanico 100% from red soil, medium consistency; formed of subalpine sands of Pliocene origin, of limestone - siliceous nature, interwoven with compact layers of fresh clay and calcareous tufa. Fermented spontaneously in terracotta amphorae on the grape skins with indigenous yeasts. Aged in amphora and bottle.

Grecanico Dorato(60%) and Carricante(40%) from 40+ years old vines from the vineyards of Calderara, Borriglione, Crasà and Picciolo which are located between 620 and 750m. The skin contact gives complexity and dense to the wine. Chardonnay, Sauvignon, Pinot Grigio and Riesling Italico are fermented separately and aged together. While fermenting in Georgian amphorae buried underground, it underwent a long maceration together with grape skin with wild yeasts and no temperature control. After the drawing off and pressing phases the wine was poured back into amphorae for at least five more months before it started ageing in large oak barrels, where it was left for six years. Wine is bottled without fining or filtration. Special Pinot Grigio you've never seen - Dark and shiny pink colour Pinot Grigio made by skin-contact. Very comfortable pure concentration of red and black fruits, and smooth texture. Fermented with wild yeast without temperature control, non-fining, non-filtered.

Paiagallo is Giovanni Canonica's original vineyards. Gianni produces stunning Barolo from this vineyard. All the works are traditional and natural in the vineyards and cellar. The vineyard is totally free from herbicides, pesticides or fertilizers. 40 days maceration, using only indigenous yeasts without any additives, vertical hand press, then aged in 20hl slavonian oak. Barolo enthusiast must experience this. Good news from Canonica is the increment of production although it is tiny addition. He got a new supply of excellent grapes from his wine's family vineyards "Grinzane Cavour". He has managed this vineyard in the same manner with his Paiagallo and wine-making as well. Hidden gem in Barolo Giovanni Canonica is the real deal on a par with Bartolo Mascarello. Gianni Canonica produces stunning wines from only 1.5ha vineyards in Paiagallo and new in Grinzane Cavour. This Nebbiolo is from Grinzane Cavour. He has managed this vineyard in the same manner with his Paiagallo and wine-making as well. Rare item for Nebbiolo geeks. Made from Ribolla grapes which have been cultivated in this area for more than a thousand years. While fermenting in Georgian amphorae buried underground, it underwent a long maceration with grape skin(so called skin contact), with wild yeasts and no temperature control. After the drawing off and pressing phases the wine was poured back into amphorae for at least five more months before it started ageing in large oak barrels, where it was left for six years. Wine is bottled without fining or filtration. Cornelissen's MunJebel Rosso is 100% Nerello Mascalese from several of his Cru's including Zottorinoto-Chiusa Spagnolo, Feudo di Mezzo-Porcaria, Crasà, and Piano dei Daini. The average vine age is 60 years. The wine itself has a very aromatic nose with pretty aromas of wild cherry, ripe plum, dark berries, crushed rock dust, hibiscus, followed by smoke, earth and leather. Very flavorful with lots of red fruits, this has soft elegant texture backed by firm tannins that lead into the long finish. I like this wine today, but it ideally it will benefit from a year or 2 of bottle age, and can be enjoyed over the next decade. IWR92
