Autumn Shinrai R2BY was brewed by Kimoto method. Locally grown Senbon-Nishiki 100%, rice polishing rate : 60%. Brewed and bottled last winter, aged in the cellar during summertime, and finally the bottles have been released in this autumn without second pasteurization. Cool refreshing aroma, smooth texture, clear-cut structure, umami, followed by dry finish. Sakeyell II 2021 version. Aoki-Shuzou released one-off special version of Yukiotoko and named it SAKEYELL. Aoki-Shuzou reserves sake in their snow cellar to make long-term ageing bottle. They picked up a part of them and made a special blend. Rich, round, and complex on the palate(atypical for Yukiotoko), but mid-to finish is cool and dry(It's a trademark of Yukiotoko!). [Cloudy]

Limited edition "Junmai". Locally grown Hattan-Nishiki 100%, rice polishing rate : 60%, Junmai-shu. This cuvée is produced small volume and is distributed to the only a few agents in Hiroshima and Hong Kong.

Premium model of Abekan. Refined, delicate Junmai-Daiginjou. Made from 100% Hyogo Hakutsuru-Nishiki, polish rate is 45%. Hakutsuru-Nishiki is a brother rice of Yamada-Nishiki, and it was developed by Hakutsuru-Shuzou in mid 00's, aimed superior quality than Yamada-Nishiki. Same as Yamada-Nishiki, it is a hybrid of Yamada-Ho(mother) and Wataribune(father). Hakutsuru-Shuzou had repeated selection for 8 years, finally they obtained satisfactory excellent quality and named Hakutsuru-Nishiki. Bokushi is super highend of Aoki Brewery - famous for Kakurei. There are two versions of Bokushi. This one is Non-Pasteurized, Non-Diluted. Hyougo AAA Yamadanishiki 100%, 37% extreme polish. Very rare. R1BY(2019) Tokubetsu-junmai

"Hatsugasumi" is a traditional brand of Kubo-Honke Shuzou. Mr.Kato(Toji) has expressed the balance between richness and sharpness. It's a great model of the authentic sake made by "complete fermentation". Released after several years ageing period. Good for room temperature and Kanzake(warm/hot). Gohyakumangoku and Nippon-bare, rice polishing rate : 60%.

The Terroir Saké. This project is focusing on 100% Jinseki plateau where the brewery is situated. Hattan-Nishiki Rice from local farmers, water from Jinseki, brewed by artisans in Jinseki. It has been made by Kimoto since 30BY. "Rich flavour of rice with cool sensation". This blue label is the most important work of our brewery and this is the style of Shinrai, said Mr.Miwa. Fine umami, smooth texture with calm and clean-cutting. The authentic Sake in a style of absolute perfection. Made from Senbon-nishiki of Hiroshima, rice poilishing rate is 60%.
