The wine is made using Cossard’s hallmark whole-bunch fermentation, which is unusual for Jura. In the 2022 vintage, production of Les Champs Perdrix was abandoned due to the sharp rise in the price of purchased grapes. As it had long been one of Frédéric Cossard’s signature and most desired cuvées, many were surely disappointed — but it made a comeback in 2023 at the same price level as before.
This wine is made from over 60-year-old vieilles vignes in a small 0.35 ha parcel in Les Champs Perdrix. This lieu-dit lies just above La Tâche and is surrounded by Aux Reignots, Les Gaudichots, and Au-Dessus-des-Malconsorts. >>>More Info
Frédéric Cossard’s red wines are generally enjoyable even when young, but since these have only recently arrived, we recommend letting them rest quietly for two to three months so they can fully regain their finesse and delicacy. Normally, we release the bottles only after they’ve reached optimal condition, but the shipment was significantly delayed and has coincided with the holiday season — and with many eager customers waiting, we’ve decided to offer them now. Producers in Jura typically de-stem their grapes before vinification, but Cossard uses whole-bunch fermentation instead. The result is a delicate, light-bodied wine that beautifully expresses the natural softness of Poulsard, with fine tannins and a subtle, pleasant astringency that adds definition and depth.
Japanese wines have recently become popular in Hong Kong, likely thanks to certain producers whose wines feature a unique flavor profile described as “dashi-kei” (broth-like), “usuuma-kei”, or “awauma-kei” (delicately savory). If you really like that style, we recommend the 2023 “Lapsus d’Or”. Pinot Noir from “Les Tuyax.” Old vines (50 to 60 years). Our parcel is located adjacent to “Aux Herbues,” which is at the frontier of NSG and Vosne Romanée. In the 2022 vintage, Super Pink and Version Sud appear in unexpected styles, but Cuvée M seems to have finished in a style closer to the previous image. The taste is perfectly expressed by this label. Like Carignan, the Mourvèdre grape variety is generally blended with other grape varieties to create balance, but Frédéric Cossard seems to be looking at something different. He used 100% of this unique grape variety to bring out the beauty of Mourvèdre that no one had noticed before.

Frédéric Cossard has a new wine called Cuvée C, made from 100% Carignan. Southern French wines are often made by blending grapes with distinct personalities, such as Carignan, Mourvèdre, Grenache, and Syrah. However, leave it to Frédéric Cossard, originally from Burgundy, to create an incredibly delicious wine with 100% Carignan! It's juicy, smooth, and you can even sense a delicate touch. It's such a vibrant wine. In 2022, which saw record-breaking drought and heat waves, the grapes suffered from extreme water shortage until just before the harvest. However, rain fell right before the harvest, revitalizing the grapes and leading to a very successful harvest.

Frédéric Cossard has a deep love for Beaujolais Gamay. In 2021, he collaborated with Damien Coquelet on a project called “Les en Hauts,” producing several cuvées in Beaujolais. In 2022, however, he released a Fleurie under SARL Frédéric Cossard.
For the élevage, he used egg-shaped cement tanks to draw out pure fruit expression. The 80-year-old Gamay vines yield small quantities of dense, concentrated juice. Thanks to whole-cluster fermentation, the wine shows a pleasant astringency and mature yet rustic tannins, resulting in a style that goes beyond being simply easy-drinking—offering instead a refined, grown-up character.

Zapoi is made of 100% Gamay from the vineyards around Villié-Morgon. Well ripe yet fresh, fine astringency gives lively expression to the wine. Smily Gamay wine. instantly delicious now.
Les en hauts is a collaboration between Frédéric Cossard and Damien Coquelet. Damian Coquelet biodynamically cultivates 9ha of Morgon, Chiroubels, Beaujolais-Villages and Beaujolais, and works in the cellar in completely non-interventional manner. Whole-bunch fermentation by natural yeast, no temperature control, no SO2 added during vinification, zero or minimal SO2 at the bottling. The wine of Les en hauts is made in Morgon by the egg tank, and bottled and cellared in Cossard's place for the moment.

[Mature Bottle Release] Following 2018, this is the second production of Mercurey. This time, it is made using Qvevris. When we first tasted the Qvevris wine by Frédéric Cossard immediately after its release (debut was the 2018 vintage), we were bewildered by its extremely unique flavor. However, after observing the maturation process over the years, we have begun to understand Cossard's intentions and the direction in which the wine is heading. It goes without saying that 2019 possesses completely different vintage characteristics compared to the 2018 (which is also controversial), so we highly recommend experiencing both.

In Burgundy, there are several 1er Crus that rival or even surpass Grand Crus, and knowledgeable enthusiasts diligently collect such wines. This 1er Cru Les Monts Luisants is one of those wines. The lieu-dit “Monts Luisants” forms part of the Grand Cru Clos de la Roche and is adjacent to the Grand Cru Latricières-Chambertin. It is easy for anyone to imagine that this is an excellent location. The genius judge of vineyards, Frédéric Cossard has been purchasing grapes from this vineyard for many years, and those grapes are crafted into wine with a genius winemaking sensibility. This is one of the highlights of his series of red wines from Côte de Nuits, such as Vosne-Romanée, Nuits-Saint-Georges and Chambolle-Musigny.

In appellations such as Vosne-Romanée and Chambolle-Musigny, however, he produces classic wines that remain faithful to the character of the terroir and bring out its uniqueness to the fullest. (Even here, he uses egg-shaped cement tanks for élevage, of course to avoid masking the flavour of Pinot Noir with oak. This point differs from the traditional methods of Burgundy wine making.)
The most successful among the elegant and airy series of 2021 is Vosne-Romanée as well as this Chambolle-Musigny, made from over 60 years of Vieilles Vignes planted on a small parcel of 0.2 ha in Lieu-dit Les Herbues. It has a sensual aroma with no heaviness; it is delicate and extremely smooth.
Frédéric Cossard’s red wines are generally easy to enjoy from a young stage, and this Chambolle-Musigny is no exception. One thing to keep in mind, however, is that this Chambolle-Musigny is capricious: its taste can vary greatly from one day to the next. [Mature Bottle Release] Les Damodes is located on the border with Vosne-Romanée. Over 55 years Vieilles Vignes from 0.3ha small parcel in Les Damodes. Four weeks maceration in wood tank, and four weeks for fermentation by wild yeast. 2018 has a different character compared to 2017, showcasing a striking contrast. It features a warm, rounded, and thick texture with a rich extract. Perhaps due to its location, there are also elements reminiscent of VR, but the unique earthiness distinctly marks it as NSG. Les Damodes consists of areas classified as Village and Premier Cru, but this is classified as Village. However, once tasted, it becomes clear that the quality consistently surpasses that of most other producers' Premier Cru wines.

The Nuits-Saint-Georges Les Damodes, born from old vines averaging over 60 years of age, planted on 0.3 hectares, has long been crafted by Frédéric Cossard. The lieu-dit Les Damodes is adjacent to Aux Boudots and lies on the border with Vosne-Romanée, very close to the golden zone that stretches from Aux Malconsorts to La Tâche. The lieu-dit is composed of both 1er Cru and Village classifications. The vinification and aging carried out in egg-shaped concrete tanks have brought out the pure fruit flavors and the delicate expression of the terroir with even greater clarity. Like Vosne-Romanée and Morey-Saint-Denis, it is a popular label forming part of Frédéric Cossard’s Côte de Nuits red wine series.
