Chardonnay from Lieu-Dit "les Chaumes", organically farmed. Complex aromas of stony fruit with white flowers. Pristine and gorgeous as we say "gourmande" in French. Racy minerality. Complexity will constantly deepen with aging.(Chanterêves) Les Chagniots is situated between Ladoix and Corgoloin. It’s a small parcel of 0.17 ha. Tomoko and Guillaume farm the vineyard organically. The vineyard is ploughed by horse by Pierre Seuillot who is a master in his field. He specialised in horse ploughing at Leflaive before setting up his small company and now ploughs for many prominent producers in the region.

Some part of Chanterêves Bourgogne Chardonnay 2017 was bottled to magnums. Two-third of the cuvée comes from Marange. One-third is the Chardonnay from "Pierres Dorées", southern tip of Beaujolais close to Lyon which soil consists mainly of fossiliferous Bajocien limestone, comparable to the soil of Chassagne-Montrachet. Aromas of citrus and tropical fruits, mineral and good weight of body, roundness in mid palate with salinity in the finish. Pleasurable to drink after release but surprisingly good aging potential for a "simple" Bourgogne.

Sauvignon from 1.4 ha parcel on clay and flint on chalk soil. Average age fo vines are 35 years old. Yield : 40hl/ha, aged in 225-liter barrels for 6 monthes. Sauvignon from 1.1 ha parcel on sand and gravel soil. It's a blend of vieilles vignes over 65 years old and young vines under 20 years old. Yield : 20-25 hl/ha, aged in 225-liter barrels for max 12 monthes. Menu Pineau from 1.4 ha parcel on mix of clay, flint, sand and gravel soil. Vines are 65 -80 years old in 2016 + 30% young vines. Yield : 40 hl/ha.  Aged for 12 months in 600-liter oak barrels and then 225-liter barrels.

Blend of Chardonnay, Sauvignon, Menu-Pineau, Fié-Gris, Romorantin and Pineau de Loire. In 2017, Puzelat terribly suffered by frost and lost majority of crop. Then they scraped up tiny crops from all the vineyards to make one cuvee of VdF. Yield : 5hl/ha. Chardonnay, Sauvignon, Pinot Grigio and Riesling Italico are fermented separately and aged together. While fermenting in Georgian amphorae buried underground, it underwent a long maceration together with grape skin with wild yeasts and no temperature control. After the drawing off and pressing phases the wine was poured back into amphorae for at least five more months before it started ageing in large oak barrels, where it was left for six years. Wine is bottled without fining or filtration. Made from Ribolla grapes which have been cultivated in this area for more than a thousand years. While fermenting in Georgian amphorae buried underground, it underwent a long maceration with grape skin(so called skin contact), with wild yeasts and no temperature control. After the drawing off and pressing phases the wine was poured back into amphorae for at least five more months before it started ageing in large oak barrels, where it was left for six years. Wine is bottled without fining or filtration.

La Lune is made from Chenin Blanc from several parcels. One year ageing in barrels. La Lune has "amphores" version too. This cuvée is aged in burried amphora for one year. Chenin Blanc 100%. Another Chenin Blanc wine is Les Fouchardes Monopole. These Chenin were planted in 1970. Wines are aged for two years in barrels before bottling.

The top cuvée Vieilles Vignes des Blanderies is also aged for two years in barrels and these old vines were planted in 1949. Sassaia is produced with Garganega (85-95%) and Trebbiano (5-15%) cultivated in the vineyards close to the winery, on Sorio hills, which soil is rich in minerals. The fermentation is spontaneous and it takes place in 30hl oak barrels, without temperature control. It is bottled in April or May of the following year, without clarification and filtration. Part of the bottling process occurs without adding sulphur dioxide. Pico is produced with Garganega grape only, carefully selected in the highest hills of Gambellara, its fermentation starts spontaneously. The aging takes place for 12 months in big barrels (15 hectolitres). It is bottled without filtration and sulphites.
