Savagnin is a spirits of Domaine de la Pinte and Jura. It is most famous as the only grape allowed in the Vin Jaune. It is also used for Macvin du Jura, Crémant du Jura, Vin de Paille, a dessert wine made from grapes left to dry on straw. This Savagnin Ouillé is a standard cuvée still wine of Domaine de la Pinte, which spent 60 months in the barrel before bottling. Grecanico Dorato(60%) and Carricante(40%) from 40+ years old vines from the vineyards of Calderara, Borriglione, Crasà and Picciolo which are located between 620 and 750m. The skin contact gives complexity and dense to the wine. Chardonnay, Sauvignon, Pinot Grigio and Riesling Italico are fermented separately and aged together. While fermenting in Georgian amphorae buried underground, it underwent a long maceration together with grape skin with wild yeasts and no temperature control. After the drawing off and pressing phases the wine was poured back into amphorae for at least five more months before it started ageing in large oak barrels, where it was left for six years. Wine is bottled without fining or filtration.

Romorantin is a local grape in Cheverny - Loire valley. Courtois's Romorantin is thick, rich, complex and round. No sharpness, but hint of fresh herb makes wine lively. The wine is changing every moment in the glass. Extreme low yield(less than 30hl/ha), fermented by wild yeast, 40 months ageing, no racking, no fining. Sauvignon Blanc 100% from two parcels. Extremely low yield(below 30hl/ha). Dense, silky, gentle touch yet very tasty. Sauvignon Blanc, Chardonnay, Romorantin and Menu Pineau. Extremely low yield(below 30hl/ha), from Clay + Silex soil. Silky texture with complexity and spiciness. The wine is changing every moment in the glass.

Special Pinot Grigio you've never seen - Dark and shiny pink colour Pinot Grigio made by skin-contact. Very comfortable pure concentration of red and black fruits, and smooth texture. Fermented with wild yeast without temperature control, non-fining, non-filtered. Made from Ribolla grapes which have been cultivated in this area for more than a thousand years. While fermenting in Georgian amphorae buried underground, it underwent a long maceration with grape skin(so called skin contact), with wild yeasts and no temperature control. After the drawing off and pressing phases the wine was poured back into amphorae for at least five more months before it started ageing in large oak barrels, where it was left for six years. Wine is bottled without fining or filtration. 2016 shows elegant side of Marc Soyard and improved a lot. 100% Chardonnay from over 30 years V.V. on clay-limestone with marl soil, selected parcel which is located on the top of hill. Fermented in wooden barrel with no SO2 added. Aged in barrel for 15-18 months. 50% new oak. No fining no filtering before bottling. "Cras Blanc" was made only 2,882 Bottles.

From over 30 years old vines. 2016 Coteaux de Dijon is enjoyable now, with good mineral and citrus fruits and nuance of cool herb. This wine is totally "natural" but you do not see any instability. Fermented in barre, and aged for 12 months. Tiny amount of sulfur was added at bottling. Unfined and unfiltered. The wine from the vineyard of Grand Cru Pfersigberg. 2012 was released as Grand Cru, but 2013 and 2014 were not given name of "Grand Cru" by INAO due to its extreme uniqueness. Then Bruno Schueller released those vintages with "Le Verre est dans de Fruits" labels. Albariño from Echizenhama Niigata. Destemmed and maceration. Orange peel, osmanthus fragrans, honey flavours are intermixed. The vineyards are situated on sand dune near the coast, so this terroir gives mineral to the wine. It goes very well with seafoods.

Chardonnay 100% from Higashikayaba Niigata. Aged for 8 months in french oak. Fresh fruits and fine vanilla flavours are well integrated. 45 years old vines which are managed like a Grand Cru produces amazing Aligote. Ripe, concentrated fruits, good acidity with long finish. Bildstoeckle is one of the flagship of Gerard Schueller as well as Pfersigberg and Eichberg. 2013 Bildstoeckle Riesling is now ready to drink. Amazing balance between fruits and mineral.
