The lieu-dit “Mainbey” is located on the other side of the small valley that separates it from the village of Fussey, at a high altitude of 470 meters. The vines are some of the oldest of the domaine at 41 years, and hence the yield is low. (by Chanterêves)

The lieu-dit “Bas des Ees” is located close to the village of Marey-les-Fussey. It is the closest parcel to the border with Hautes Côtes de Nuits but still on the side of Hautes Côtes de Beaune. It is surrounded by pastures and far away from the neighboring parcels. Given its high altitude of 470 meters, it is the last parcel we pick. This also explains its freshness and tension. The lieu-dit “Les Monts de Fussey” is situated above the village of Echeveronne, just below Fussey. It is at the borderline of Hautes Côtes de Beaune and Nuits but still on the side of Hautes Côtes de Beaune. Among our Hautes Côtes de Beaune parcels, it is the lowest in altitude at 400 meters. It faces southeast on a moderate slope, with very stony limestone-marl soil. (by Chanterêves)

This pétillant naturel is made from a blend of Gamay, Aligoté, and Pinot Noir. Whole clusters of Gamay are fermented with maceration in the pressed Aligoté juice for one week, after which the Gamay is pressed. This method, called “Flottaison,” was pioneered by Daniel Sage in Ardèche. The Aligoté comes from all the Hautes Côtes Aligoté parcels of Domaine Chanterêves, harvested during the first picking (the second picking grapes are used for the respective Aligotés), and the Gamay comes from a 15-are parcel located in the village of Fussey.
The lovely label was drawn by Tomoko's cousin, and Matsuri means 'festival' in English.
(Please keep the bottle upright and chill it well before serving to avoid gushing. Handle the bottle gently and uncap it slowly.)

In 2015, Marc Soyard acquired this small 0.33-hectare vineyard, located in Chenôve next to Bizot's Le Chapître. The vineyard was planted in 1983 and 2001 on clay-limestone soil and is farmed biodynamically.
The winemaking process uses whole bunches with semi-carbonic maceration for two weeks in open wooden vats before fermentation. The wine is fermented by natural yeast with no added SO2, and undergoes no racking, fining, or filtering. It is aged for 15 months in used oak barrels. Only 1,761 bottles were produced.

Fermented in wooden barrel with no SO2 added, no culture yeast added. Aged in barrel for 18 months. No new oak. No fining no filtering before bottling. The Monopole "Cras Blanc" was made 6,471 bottles in 2022.

Bain de Bulles Guy Wurtz (= Bath of bubbles, Gewurztraminer). It's advertised as a Pet Nat, but currently has no bubbles. Maybe just a slight tingle on the tongue. To be clear, this is not a sparkling wine at this time. However, whether it has bubbles or not doesn't really matter, the richness of the juice and the acidity are superb. We thought it might be low alcohol, but it's a proper 12.5%. We didn't feel the alcohol at all. The grapes are Gewurztraminer from Alsace. This is delicious.

Bain de Bulles (= Bath of bubbles). This sparkling wine is made from Muscat grapes in Alsace and has a rich fruitiness paired with vibrant acidity. Chilling it close to 0 degrees makes it very refreshing! Although it is not recommended for those who have been educated to consider V.A. (volatile acid) in wine as a defect, there is a dedicated fan base for wines where V.A. is expressed in a moderate and exquisite manner, positively enhancing the wine.

[Lot 2021] This Pet-Nat is made from old vines of Aligote in Puligny-Montrachet. It has a crisp, lemony flavor with refreshing bubbles. By the way, "Chassornade" is a word coined by Frédéric Cossard, combining "Chassorney" and "Lemonade". Yes, he wanted to make a Pet-Nat that tastes like lemonade! It's cloudy because it was released without disgorgement.
