The wine is made using Cossard’s hallmark whole-bunch fermentation, which is unusual for Jura. It opens with an intensely fruity impression, where notes of amaretto, Dr Pepper, ripe raspberries, and American cherries blend seamlessly together. At first, its concentration and volume can feel a bit overwhelming, but after about twenty minutes, the wine softens and finds its balance. Producers in Jura typically de-stem their grapes before vinification, but Cossard uses whole-bunch fermentation instead. The result is a delicate, light-bodied wine that beautifully expresses the natural softness of Poulsard, with fine tannins and a subtle, pleasant astringency that adds definition and depth.
Japanese wines have recently become popular in Hong Kong, likely thanks to certain producers whose wines feature a unique flavor profile described as “dashi-kei” (broth-like), “usuuma-kei”, or “awauma-kei” (delicately savory). If you really like that style, we recommend the 2023 “Lapsus d’Or”. Jean-François Ganevat, a friend of Frédéric's from Jura, helped him find a source of high-quality grapes. Frédéric Cossard treated those healthy grapes using his manner and produced vivid wines. "Feel Good" is made from Savagnin. The label cannot include "Savagnin" if the wine was vinified outside of Jura, even if it is classified as Vin de France. Therefore, Frédéric named the wine "Feel Good", using the initials F for Fred and G for Ganevat. The wine is made from grapes from vines over 50 years old, fermented with wild yeasts, and aged in used barrels or qvevris for nearly a year. This version is aged in barrels.

Vin Jaune - Aged in the barrel 6 years and 3 months. During long ageing period, there is no adding, no racking. The wine obtains concentration and complexity, remarkable walnuts, spices and Sherry-like flavor. This wine has long life. It can last 50 years and more.

Pet-Nat. Ripe fruits and very fine and slight air on the palate, as mentioned as "finement pétillant" on the back label.

Ploussard. It is as light as a feather, smooth, yet juicy and fragrant.
