Les Quarterons has been produced since his fathers's generation. From the 30 years vieilles vignes on Argilo-Calcaire soil, fermented in stainless tank(3 months) and aged for 24months "Sur Lie". Very best of modern style Sancerre. Sébastien Riffault also produces tiny volume of Sancerre Rouge from Pinot Noir. Same as other cuvées, this red wine is made from perfectly mature grapes with 50% botrytis. Only 1 ha, from 40 years old vines on Argilo-Calcaire(Caillottes) soil, No SO2, Non-filtered. Auksinis "Maceration" version. Perfectly ripe 100% Sauvignon blanc from over 50 years vieilles vignes on Argilo-Calcaire(Caillottes) soil. Contains 50% botrytis, yield : 20hl/ha. 36 months ageing "sur lie". No SO2 added, bottled without fining and filtration.

Perfectly ripe 100% Sauvignon blanc from over 30 years vieilles vignes on Argilo-Calcaire(chalky-clay) soil. Contains 30% botrytis. 24 months ageing "sur lie". No SO2 added, bottled without fining and filtration. Romorantin is a local grape in Cheverny - Loire valley. Courtois's Romorantin is thick, rich, complex and round. No sharpness, but hint of fresh herb makes wine lively. The wine is changing every moment in the glass. Extreme low yield(less than 30hl/ha), fermented by wild yeast, 40 months ageing, no racking, no fining. [20 Years Anniversary Label] Old vines of Gamay, Cabernet Franc, and Côt (Malbec), Pinot Noir. Extremely low yield(below 30hl/ha), from Clay + Silex soil. Silky texture with complexity and spiciness. The wine is changing dramatically every moment in the glass.

[20 Years Anniversary Label] Old vines of Gamay, Cabernet Franc, and Côt (Malbec), Pinot Noir. Extremely low yield(below 30hl/ha), from Clay + Silex soil. Silky texture with complexity and spiciness. The wine is changing dramatically every moment in the glass. La Lune is made from Chenin Blanc from several parcels. One year ageing in barrels. Ze Bulle is made by unique and original method which was invented by Philippe Gourdon of Château La Tour Grise . All the carbon gas and all the aromas generated during the fermentation process are recharged into the wines before bottling.

Ze Bulle 2018 is softly bubbled Rosé, a blend of 70% Cabernet Franc, 15% Grolleau Noir and 15% Gamay from biodynamically farmed vineyards.

Françoise and Phillipe Gourdon retired in 2015 and then Bruno Ciofi's “Béret & Compagnie” had taken over the production of Ze Bulle in 2018.

Menu Pineau from 1.4 ha parcel on mix of clay, flint, sand and gravel soil. Vines are 65 -80 years old in 2016 + 30% young vines. Yield : 40 hl/ha.  Aged for 12 months in 600-liter oak barrels and then 225-liter barrels. Blend of 2/3 Côt(Malbec) and 1/3 Gamay from tiny 0.75ha parcel on clay and flint soil. Age of vines are average 35 years old. Yield : 40 hl/ha, aged for 10 to 12 months in 600-liter oak barrels and 225-liter oak barrels. Rosé d'un Jour is made from Grolleau Gris, with residual sugar. Very smooth and comfortable as well.

La Lune is made from Chenin Blanc from several parcels. One year ageing in barrels. La Lune has "amphores" version too. This cuvée is aged in burried amphora for one year. Chenin Blanc 100%. Another Chenin Blanc wine is Les Fouchardes Monopole. These Chenin were planted in 1970. Wines are aged for two years in barrels before bottling.
