The new Chassorney by Aurélien Verdet, starting with the excellent 2022 vintage, is a wine with great aging potential. It is easy to imagine its future beauty. We could sense a subtle difference from Frédéric Cossard in the well-structured, authentic Bourgogne style that beautifully integrates the ripe, concentrated fruit. These wines are very promising and will likely evolve gracefully over time.
Domaine de Chassorney Volnay is made from vines over 55 years old on the lieux-dits of Les Lurets, Les Grands Poisots, Paux Bois, and Les petits Poisots, spanning a total of 1.4 hectares. This assemblage of four parcels contributes to the wine's depth and balance.
Like Saint Romain Sous Roche, it undergoes 100% whole-cluster fermentation with semi-carbonic maceration in a stainless steel tank. Unlike Frédéric Cossard, the aging process has been changed from egg tanks and qvevris (used from 2018 to 2021) back to old barrels. It has become a supreme, authentic Burgundy, combining intensity and softness. It is enjoyable now, but it is clear that it will also age well over time.
