The crown cap is back. Made from Burgundy Aligoté with primary fermentation in stainless steel tanks, followed by secondary fermentation in the bottle on the lees. No cultured yeast added, zero SO2, and unfiltered. Fine, smooth bubbles at 4+ atmospheres blend with rich fruit notes—lemon, grapefruit, white peach, a hint of herbs, and minerality—creating a beautiful cloudiness and a truly distinctive flavor. By the way, "Chassornade" is a word coined by Frédéric Cossard, combining "Chassorney" and "Lemonade". Yes, he wanted to make a Pet-Nat that tastes like lemonade! We feel that Frédéric Cossard has become more skilled in his approach to vinification and ageing without using barrels. Bigotes is a great natural wine classic, made from Chardonnay from the Puligny-Montrachet area, near Volnay and Pommard. The age of the vines is over 55 years. Frédéric Cossard produces wine exclusively from old vines. The word L’Equilibriste can be translated into English as “Equilibrant” or “Tightrope walker,” and indeed, the label depicts someone balancing while dancing on the edge of a razor blade. The label also states sans sulfites ajoutés (no sulfur added). Marc Soyard is a natural wine producer who generally uses zero or very minimal amounts of sulfur, but this L’Equilibriste is said to be a more daring cuvée with no SO2 in his lineup. B392 DOMAINE DE CHASSORNEY (AURELIEN VERDET) SAINT ROMAIN ROUGE SOUS ROCHE 2023 750ml : HK$420.00 Available Frédéric Cossard established Domaine de Chassorney in 1996 and spent 15 years perfecting this 1.4-hectare vineyard, gradually increasing its precision and cultivating it into one of the finest in Burgundy. Aurélien Verdet’s second vintage since fully taking over the vineyard in 2022. The pure essence from old vines with an average age of 75 years is further amplified by the character of the 2023 vintage, resulting in a rich and powerful wine with remarkable transparency. While Frédéric Cossard used egg tanks and qvevris (2018–2021) for élevage, Aurélien Verdet has switched back to barrels (mostly old barrels with a few new ones). A major difference from the Frédéric Cossard era is that the aging potential of the wine is easier to predict. Supported by high-quality concentrated juice, ripe tannins, and refined acidity, the 2023 vintage will likely age gracefully for at least 15 years. B021 FREDERIC COSSARD BOURGOGNE BLANC BIGOTES 2021 750ml : HK$320.00 Available Bigotes is a great natural wine classic, made from Chardonnay from the Puligny-Montrachet area, near Volnay and Pommard. The age of the vines is 55 years. Frédéric Cossard produces wine exclusively from old vines. The fruit and mineral characteristics are well-balanced at a high level. The 2021 vintage Bigotes is a dense and highly refined wine pressed from a very low yield of 25 hl/ha.
