[Lot 2023] The popular Pet-Nat La Chassornade 2023 has arrived. The crown cap is back. Made from Burgundy Aligoté with primary fermentation in stainless steel tanks, followed by secondary fermentation in the bottle on the lees. No cultured yeast added, zero SO2, and unfiltered. Fine, smooth bubbles at 4+ atmospheres blend with rich fruit notes—lemon, grapefruit, white peach, a hint of herbs, and minerality—creating a beautiful cloudiness and a truly distinctive flavor.
By the way, "Chassornade" is a word coined by Frédéric Cossard, combining "Chassorney" and "Lemonade". Yes, he wanted to make a Pet-Nat that tastes like lemonade! It's cloudy because it was released without disgorgement. >>>More Info

The wine is made using Cossard’s hallmark whole-bunch fermentation, which is unusual for Jura. It opens with an intensely fruity impression, where notes of amaretto, Dr Pepper, ripe raspberries, and American cherries blend seamlessly together. At first, its concentration and volume can feel a bit overwhelming, but after about twenty minutes, the wine softens and finds its balance. In Burgundy, fine wines are fundamentally based on a single vintage and a single vineyard, so wines made by the solera method can only be classified as Vin de France or AC Bourgogne and are therefore seldom seen. However, Marc Soyard releases 600 bottles each year of a Chardonnay produced by the solera method.
Acte II is composed of five vintages: 2017, 2018, 2019, 2020, and 2022.
In the case of Sherry, the solera system is used to minimize differences in flavor between vintages and to maintain consistent quality. Marc Soyard, however, is said to have adopted this method not for uniformity, but to downplay the influence of the harvest year and instead highlight the characteristics of the vineyard itself. >>>More Info

Unusually for the Côte de Nuits, the lieu-dit Les Monts Luisants produces a small amount of white wine. Les Monts Luisants Blanc, the first release from Frédéric Cossard, is made from Chardonnay grown in the highest part of the vineyard. The rich fruit is supported by bright acidity and minerality, and as with Cossard’s other white wines, it is expected to require several years to reach its ideal drinking window. In the 2022 vintage, production of Les Champs Perdrix was abandoned due to the sharp rise in the price of purchased grapes. As it had long been one of Frédéric Cossard’s signature and most desired cuvées, many were surely disappointed — but it made a comeback in 2023 at the same price level as before.
This wine is made from over 60-year-old vieilles vignes in a small 0.35 ha parcel in Les Champs Perdrix. This lieu-dit lies just above La Tâche and is surrounded by Aux Reignots, Les Gaudichots, and Au-Dessus-des-Malconsorts. >>>More Info
Frédéric Cossard’s red wines are generally enjoyable even when young, but since these have only recently arrived, we recommend letting them rest quietly for two to three months so they can fully regain their finesse and delicacy. Normally, we release the bottles only after they’ve reached optimal condition, but the shipment was significantly delayed and has coincided with the holiday season — and with many eager customers waiting, we’ve decided to offer them now. Bigotes 2023 has dense fruit, pronounced minerality, and vibrant acidity. These are all on a grand scale and finely defined, making the wine feel fresh in its own distinctive way. We feel that Frédéric Cossard has become more skilled in his approach to vinification and ageing without using barrels.
Bigotes is a great natural wine classic, made from Chardonnay from the Puligny-Montrachet area, near Volnay and Pommard. The age of the vines is over 55 years. The result is a delicate, light-bodied wine that beautifully expresses the natural softness of Poulsard, with fine tannins and a subtle, pleasant astringency that adds definition and depth.
Japanese wines have recently become popular in Hong Kong, likely thanks to certain producers whose wines feature a unique flavor profile described as “dashi-kei” (broth-like), “usuuma-kei”, or “awauma-kei” (delicately savory). If you really like that style, we recommend the 2023 “Lapsus d’Or”. At first, the acidity bursts forth and catches you off guard, but soon the liquid comes together, gaining harmony and smoothness. Pinot Noir from “Les Tuyax.” Old vines (50 to 60 years). Our parcel is located adjacent to “Aux Herbues,” which is at the frontier of NSG and Vosne Romanée. Ripe, rich fruit character with a well-balanced interplay of acidity and minerality. Unlike the typical Riesling wines made by producers in Alsace, this one carries Frédéric Cossard’s signature style—fresh and vibrant.
Under INAO regulations, wines made in Burgundy from Riesling cannot display the grape variety on the label. As a workaround, Frédéric Cossard came up with the name “Rafling.” The word “Rafling” means “raffle” or “lottery” in Danish—a witty wordplay combining it with “Riesling.”
(The back label says the origin of the grapes is Jura, but that was a misprint.)

Made from Gewurztraminer supplied by a friend in Alsace. While details are not disclosed, the grapes come from a Grand Cru vineyard in northern Alsace. The fruit shows full ripeness and concentration, yet the clean acidity gives the wine a sense of freshness. Slightly cloudy, it also has a nectar-like density.
Under INAO regulations, wines made in Burgundy from Gewurztraminer cannot display the grape variety on the label. As a playful workaround, the sound combines “Guy Wurtz” with “Gewurz,” evoking an Alsatian character.

"Feel Good" is made from Savagnin. The label cannot include "Savagnin" if the wine was vinified outside of Jura, even if it is classified as Vin de France. Therefore, Frédéric named the wine "Feel Good", using the initials F for Fred and G for Ganevat. The wine is made from grapes from vines over 50 years old, fermented with wild yeasts, and aged in used barrels or qvevris for nearly a year. This version is aged in barrels.

In the 2022 vintage, Super Pink and Version Sud appear in unexpected styles, but Cuvée M seems to have finished in a style closer to the previous image. The taste is perfectly expressed by this label. Like Carignan, the Mourvèdre grape variety is generally blended with other grape varieties to create balance, but Frédéric Cossard seems to be looking at something different. He used 100% of this unique grape variety to bring out the beauty of Mourvèdre that no one had noticed before.
