Song of the Forest 神雷 森の唄

As announced last month, the complete version of Song of the Forest has arrived. The sake, pasteurized at the perfect time, actually feels fresher than the unpasteurized (raw) type and has a sharper finish. A noteworthy point is that its development after opening is more fine wine-like. While the kyokai yeast, which releases a fancy aroma immediately upon opening, is excellent, sake brewed using ambient yeast from the cellar or wild yeast like this may offer a richer story full of ups and downs to enjoy.

"Shinrai Mori no Uta" (Song of the Forest) was born from the local Jinseki Highland's "Jinseki Yeast Project."

In recent years, Miwa Shuzo has promoted a shift in brewing methods by not artificially adding yeast and instead using ambient yeast from their cellar. This time, the idea behind this sake came from a fresh perspective: "Could there still be many unknown yeasts in Jinseki Highland that we have never encountered before?" and "Brewing sake from Jinseki Highland rice using yeasts collected from the natural environment of Jinseki Highland—this is also sake brewing true to the Jinseki Highland terroir, isn’t it?"

Yeast was sampled from various sources, including flowers and beehives. With the cooperation of the Hiroshima Food Technology Industrial Center, after numerous processes, a yeast strain selected from grapes harvested at Hara Farm was chosen. Using this yeast, Mr. Miwa and his team brewed Jinseki-Hattan and Shin-Gin Moeibuki for the Tomegake process. A portion was first released as unpasteurized sake, followed by the release of the pasteurized complete version.




Miwa-Shuzou is located in a deep mountain in Hiroshima - 500 meters above sea level - cold climate and pure water makes exquisite Saké. 神雷 = Thunder God, its sound "Shinrai" also means "Trust" in Japanese.


Authentic Series : This artisanal craft Saké has beautiful structure, all these elements : umami of rice, fresh acidity, and delicate aroma are well integrated by 12 months ageing in their cellar. Then bottles are released when they reach the perfect condition.

Seasonal Limited Edition : Miwa-Shuzou releases seasonal version of various Saké such as freshly brewed in winter, autumn release etc. Miwa-Shuzou slices their Saké from different angle with different timing to appreciate full potential of Saké.

Jinseki Kougen : Saké from the terroir. This project is focusing on 100% Junseki plateau where the brewery is situated. Nakate-Shinsenbon Rice from local farmers, water from Jinseki, brewed by artisans in Jinseki.
